Fajita-Taco Night

I don’t usually cook a lot of Mexican cuisine, however, when I do cook it, my two favorite recipes to make are quesadillas and fajita-tacos. I say fajita-tacos because people say what makes a taco difference from a fajita is the ingredients.  People say that a fajita is served in a large flour tortilla and the fajita is made of grilled meat, onions, and peppers, while a taco is made of a folded corn or flour tortilla with various ingredients including meat, cheese, and cilantro. Well, my recipe includes a combination of both. For this recipe you will need:

  • 1 lb flank steak
  • Garlic salt Powder
  • Onion Powder
  • Chili Poweder
  • Cayenne Powder
  • Cumin Powder
  • 2 whole tomatoes
  • 1 whole onion
  • Cilantro
  • 2 avocadoes
  • 1 whole pepper
  • 1 garlic clove
  • Small size flour tortillas
  • Salt
  • Ground pepper

Instructions:

Season the flank steak with a bit of salt and ground pepper and let it sit out until it is room temperature.

You will do a lot of preparation for this meal which you can start with on the mean time.

For the Chismol (Salvadorean way for pico de gallo):

Dice 2 whole tomatoes and a half onion.

Chop half of the cilantro.

Mix all together in a bowl.

Add salt to your taste.

Place in the fridge while steak is cooking.

For the guacamole:

Cut the avocado in half and remove the seed.

Scoop out the inner flesh of the avocado with a spoon.

Mash avocadoes to a chunky consistency in a bowl.

Mix in a bit of the diced onions and tomatoes.

For the steak:

Once the steak is room temperature, season the steak with garlic powder, onion powder, chili powder, cayenne powder, and cumin powder.

Julienne (cut into strips) one whole pepper and half an onion.

Cook the whole piece of flank steak in a cast iron (any frying pan can be used) for a few minutes, or until steak is brown but not completely cooked.

Take steak out and chop into medium size pieces.

Place chopped pieces of steak back in the cast iron, add the garlic, onions, and peppers.

Cook until brown or to your taste.

Heat up a flour tortilla.

Add the steak, guacamole, and the chismol to the flour tortilla and enjoy your fajita-taco.
