A Night of Cauliflower Fried Rice
And just like that I’m welcoming May with a new recipe post. Apparently it’s been almost a year since the last time I posted about food so nothing like a Sunday spent making something new, meditating, finishing a book, and trying this new recipe. I’ve been trying to stay away from rice lately and found that cauliflower is a perfect, healthy, and high in fiber replacement for rice. So I decided to give this yummy full of flavor recipe a try. I liked it so much that I decided to write a post about it. Hope you get to try it too! Anyways here it goes.
Ingredients
- Cauliflower
- 2-3 carrots
- Bell green pepper
- Onion
- Garlic
- Ginger
- Bean sprouts
- Spinach
- Two eggs
- Rice Vinegar
- Sriracha sauce
- Soy Sauce
Start by chopping the cauliflower into big pieces then using a food processor chop the cauliflower into grain size.
Once you are done chopping the cauliflower in the food processor. It should look like the picture below. (It almost looks like rice doesn’t it?)
Once you are done doing this, chop the other vegetables and once everything is chopped combine it all in a bowl.
Heat up the wok or pot for cooking. Place all the vegetables and cauliflower in the wok and stir.
Make some room to crack and egg in the wok, when the egg starts cooking a bit more, mix it with all the veggies.
Finish cooking for 6 minutes or so
And Voila there you have it! and easy and extremely healthy veggie recipe that can be easily make a few days worth.
