Mexican Night
I always tell my boyfriend that if I wasn’t Salvadorian I should have been Mexican. I love Mexican food and I enjoy cooking it so much! One of my favorite comfort foods to cook are Mexican quesadillas. They taste great and are also very cheap to make! So today I will show you how to make Mexican quesadillas, “Diana style”.
Ingredients:
- Boneless chicken breast
- 1 Onion
- 1 Pepper
- Shredded Mexican blend style cheese
- Flour tortillas
Season the chicken breast with garlic salt, paprika, salt, pepper, cumin, coriander, and cayenne pepper.
Finely chop onion and pepper.
Pan fry the chicken until it is mostly cooked.
Take chicken from frying pan and dice it.
Put the chopped onions and peppers into the pan and then add the chicken.
Place a flour tortilla on a different frying pan. Put some chopped chicken with onions and pepper, and sprinkle cheddar cheese on top. Let it cook for a little bit until the cheese starts melting.
Place another flour tortilla on top and press it down with a spatula. Cook until both sides are brown and cheese looks melted.
