Something New for Dinner
This week I cooked my favorite fish: Branzino. Also known as the Mediterranean seabass. It’s usually very hard to find but some supermarkets such as Whole Foods Market, Joseph’s Classic Market, and Doris Italian Market will carry it from time to time. It is usually on sale for $10 a pound.
Ingredients:
- Fresh Basil
- Fresh Cilantro
- 1 Lemon
- 2 lbs of whole Branzino
- 2 cloves of garlic
Fish Seasoning Ingredients:
- ½ tbs Paprika
- 1 tbs Salt
- 1 tbs Garlic Salt powder
- 1 tsp Fennel seed
Instructions:
Chop two cloves of garlic, the fresh basil, and the fresh cilantro.
Mix the seasoning in a bowl.
Stuff the whole branzino with the chopped garlic, basil, cilantro, and a quarter lemon.
Use a cast iron skillet to fry the branzino. Cook on med-high without turning for about 5 minutes or until the skin is crisp. Flip the fish over and continue cooking for about another 5 minutes.
Finish the branzino in the oven at 375F for about 10-15 minutes, flipping halfway through
Remove the fish to a serving plate, squeeze some lemon for flavor, and let rest for 5 minutes before serving.
